Lemon Creme' Honey is made with Sleeping Bear Farms premium Star Thistle honey. We start each batch by selecting the finest drums of our honey harvest. We look for light color and fine crystallization along with the most crisp floral flavor. We mix organic lemons with our liquid honey, straight from the beekeepers! The time tested and traditional methods of making creme honey are employed in our small bottling facility at the farm. We control the temperature and humidity while slowly mixing and allowing the crystalline matrix to start building. Before the honey sets up nice and firm, we bottle the batch, it then remans in the controlled storage for two weeks to finish setting up. When you open your jar of Lemon Creme honey you are greeted by rich lemony citrus aromas that take your mind to a relaxing place, but the real treat is that first taste.
